This dish is so simple yet insanely delicious. I saw a version of it on Reddit a while back (wish I could remember who posted to give credit). I have tweaked the recipe a bit, and it’s one of my staple favourites. Real keto comfort food!
INGREDIENTS
2 kgs chicken breast (or thighs), tenderised with a mallet
1 cup tomato salsa
400g bacon, diced
500g cream cheese, thinly sliced
400g shredded pizza blend cheese (or mozzarella)
4 fresh jalapeños thinly sliced
METHOD
Fry the bacon pieces until crispy. Set aside.
In a very large baking dish, toss the tenderised chicken with the cup of salsa.
Top chicken evenly with sliced cream cheese.
Top evenly with 3/4 jalapeño slices.
Top evenly with 3/4 crispy bacon.
Scatter shredded cheese evenly over the casserole.
Scatter remaining jalapeño slices and bacon over the cheese.
Bake at 180°C until the cheese is brown and bubbly. Allow to cool for 15 mins before dividing into portions and serving with sour cream.
