Rare early meal this morning, since I didn’t sleep much, but forgot to post and have been falling asleep all day since. … Eggs, Bacon, Sausage Links, Sausage patties.

I have this tendency to want to eat the same thing several times once I have discovered I like it so I made us steak again! This time with a reverse sear and with herb butter on top. I was going for medium but I am somewhere between medium and well done. Still tasted good and was tender. If my mom wasn’t visiting this week I’d make it again tomorrow
She’s going to eat well while she’s here though, pot roast, beef tenderloin, pork loin, bbq chicken, and chili dogs are all on the menu. I made a cheese cake tonight too, lemon vanilla flavored, might have to test it for quality tonight
I’m going through my ‘fasting sucks’ phase again, so cream in my coffee it is this morning! Just enough fat to see me through til lunch without wanting to cut someone!
Yep. This is going to be me in a little bit. Not yet morning here. Trying to stick to intermittent fasting which means no cream in the morning. Some days are better than others. Hopefully tomorrow is an easier one.
Is this just sliced pepperoni with shredded cheese and maybe some other toppings and then baked? Genius.

Roast beef (chuck) with rosemary garlic au jus and mozzerella, tomato and fresh basil salad with olive oil & a lil bit of balsamic
Zucchini, spinach, mushroom and egg scramble with avocado and soured cream. Mostly OMAD I expect, with a coffee or two added.
Today’s food.
I absolutely bloody love chicken tenderloins fried on both sides in searing hot olive oil, until the meat goes crunchy. Crunchy food is something I love, and find difficult to get eating keto, but chicken done this way always hits the spot.

I didn’t have salsa so improvised. I used boneless thighs so sliced them in half and pounded with tenderizing mallet. I halved the recipe since just the two of us.
I used crushed tomatoes and added some chopped onion and a spoon of sambal olek. If I’d had some cilantro I would have thrown it in there also. Have some sprouting in the garden but it’s barely an inch high so not big enough to start harvesting yet.
