Jalapeño popper chicken casserole
I just put a pan in the oven. Question - how do I cut, core and slice jalapnenos without coughing my head off? I do run cold water over them and still the oil gets to me. I even have this issue with serrano chiles. Just wondering if there is a secret that I don’t know about.

Sorta late here. Interesting prices though. Here in the US west coast, thighs are the same price or cheaper than breasts and if getting bone in they are definitely cheaper. It was a nice surprise when we went keto. I assume the breasts were more due to demand and the low fat mantra of decades past. I’m still crossing my fingers that it doesn’t reverse with breasts become cheaper than thighs and legs.
Edit: Oh, we are making jalapeño poppers today, not the casserole, but still excited to try something new!
Where I live Legs…$0.89 lb, Thighs…$1.19 lb, Breast…$2-3.00 lb.
This is at discount grocery stores and some bigger chains can be more expensive. Breast prices can be significantly more than I listed too.

Wow. Nice prices. Here $2.99 lb for Safeway brand boneless thighs and breasts. $2.00 for bone in breasts. $1.69 for bone in thighs. Leg quarters are in between, more than thighs but less than breasts. For organic or grass fed or free range it’s between $6-8 per lb. We watch for sales on that!
I do a giant pack, freeze the bones and when I have a bunch I make soup.

I slice them whole, seeds and all! Nice little rings of entire jalapeño. They aren’t mega spicy so you can afford to leave the seeds in
Personally I would Traci, it looks like a short cooking time for chicken. I suppose pounding it thinner will definitely make it cook faster but I wonder if it’s enough.
No need, if you pound the thighs first it will all cook through fine whilst baking. You want a really good bubbly brown top on the casserole
