@farmgirl I agree Kristie’s cookbook is worth the purchase I have been enjoying it. The Kindle version is on sale today for $3.50, a bargain! A number of her recipes are available on YouTube including the carrot cheesecake. I haven’t compared the 2015 YouTube recipe to her cookbook yet, she may have modified the recipe in the last 2-years

A keto meal fit for a truck driver! Bacon king (from burger King) no sauce and no bun.I added my own homemade mayo. And a HWC latte!
I forgot to take pictures but I had 8oz of Mission BBQ Moist Brisket and green beans w/ bacon.
Life sucks when you forget your keto lunch on the kitchen counter.
Chunks of pork sautéed with red bell pepper. Then I melted a Mexican blend of cheese on top and added green onion, olives, tomatoes, jalapeños, and sour cream. I’ve been avoiding dairy for a couple of months, but I’m stalled anyway, so I figured I might as well indulge. This meal (for breakfast!) was so deeply satisfying on every level, it gave me a whole new level of commitment to keto.
That coconut soup looks really good. Recipe? Is it similar to a Tom Ka Gai soup you can order at Thai restaurants?

A nice 20 oz grass fed ribeye with all of the fat left on it! I got a discount of $3.00 a pound off the sale price as they didn’t want to charge me for all that fat!!!
Actually, I only ate about half of it today.
Loin strip steak cooked in butter and spices, with butter/garlic shrimp, crab, and broccoli. Cream cheese/hwc/cocoa powder/frozen strawberry shake for dessert.
Keto Blondies (only one small square to test, as I made them for a party…will have to see what the non-keto folks think of them…).

They are definitely nice and light and soft. I used a mix of 100% Ghirardelli chocolate, chopped, and Lily’s semi-sweet chocolate chips (stevia sweetened, for those who haven’t used them). I used almond meal, rather than almond flour, since it’s what I had available, but I think that worked because you have to sift the almond and coconut flour. A bit of a laborious recipe, and used many bowls, but the end result is very good.
