you must mean mascarpone if it is in relation to @devhammer - he is mad for the stiff. It is sort of a cross between cream and cream cheese - not really cheese at all, just creamy. It is classified as a cheese because of the process but I think it is more like a really thick cream. Quite sweet in flavour and yummy.

Hey look on you tube there’s a video to show how to make low carb tortillas with coconut flour and egg whites. Made then today. They were pretty good I just need practice flipping them. It’s hard to use a utinsil and much easier to flip by pinching the edges with two hands and Flip by hand for real!

I know this is way off course but …I just went through my macros for the day after dinner and I use the my fitness pal app which I love so far. It has a plethora of data when searching for types of food to plug into my day. My total carbs were 31 grams but I went thru and added all the fiber up and it’s total was like 20 grams Is it legit for me to subtract the fiber from my total which would give me only 11 carbs and make me very happy🤔 On the other hand I’ve also heard that some people divide their protein in half and then take number and add it to carbs! That totally doesn’t make sense to me because my healthy range for protein is between 60 and 100 grams which would totally make me over on carbs right out of the gates! God bless!

OMAD Wednesday. Smoked beef short ribs, broccoli salad with toasted pine nuts. Washed it down with Shot of Kerrygold butter and brain octane.

The protein thing is crazy, as long as your protein is within your range it’s fine. The total carb and fiber issue is really up to you. If you can consume 30 or 35 grams of total carbs and keep your net under 20, go for it! Some can and some can’t.

Dindin tonight was guacamole mixed with sour cream and then scooped with parmesan cheese crisps. I heard the recommendation on a Ketovangelist Kitchen podcast. It’s delish, but the crisps flavor overpowered the guac mix. I plan to use the guac mix in a chicken dish or as a salad dressing :grinning::sunglasses:

the fish was coated in a simple batter made with eggs and almond flour. The trick is to separate the eggs, beat the egg whites to stiff peak and the fold in the egg yolk with almond flour mixture. It makes a very light and fluffy batter, that puffs up a lot when it is fried. I took the pictures and will be adding the the step by step recipe on this forum. Hopefully tonight

This carrot cheesecake tastes as good as it looks. Less than 4 net carbs per serving. It’s out of “Cooking Keto With Kristie”. I really can’t post the recipe without her permission, and I have no way of contacting her to ask her, so I would suggest you buy her cookbook. Every recipe I have tried so far has been outstanding. I highly recommend it.

This morning I had two of Brenda Zorn’s famous pork rind pancakes smothered in butter, lunch was left over buffalo turkey fathead pizza, and dinner was almond flour dusted and fried flounder with a mixed green salad and homemade ranch dressing. I love Keto meals!
