Running all morning, taking Shelby back to cast replacement. Came home still not feeling well and a bad headache to add to it all. … Chicken/Broccoli Soup, Cheese Burger, Pepperoni, Pickles and Olives.

I hear you there! I was disappointed as I love salmon from a can usually but I definitely don’t want to chew on pieces of salmon spine! :laughing: I’ll be sticking to a nicer brand I think!

I made up for the lack of protein in my lunch with a yummy dinner instead! 3 eggs scrambled with bacon grease, left over corned beef and bacon! :yum:

I had eggs at lunchtime and didn’t bother taking a pic as it was just a bowl of scrambled eggs with my homemade coconut oil ghee (a 50/50 mix of coconut oil and homemade ghee melted and mixed together), salt and pepper. So really not anything special. I was wrong… :joy:

This was four of my own hens eggs, all from Waffle hen as Fidget only started laying four days ago, laid over the second half of last week. When I cracked them open I straight away noticed the difference in colour compared to eggs from the week before, these were much more orange in colour, and I swear they were the best eggs I’ve ever tasted! My girls always proudly announce when they’ve laid their eggs now and it’s like the love and care I give them has actually infused into these eggs, I don’t know how else to describe it…

@CrackerJax Aha, They are owned by brothers, they’re just German. I didn’t realize that Trader Joe’s was owned by a guy from Germany and thought they were Americans. But I hadn’t ever heard of ALDI till I spent time on the east coast, where perhaps coincidentally I never saw Trader Joe’s. Someone told me they were owned by brothers.

Cool! I am in the UK.
There was a wonderful story that Aldi and Lidl were brothers who opened a supermarket- Lidls. Then they fell out and Aldi said “whatever you do I will match, and then better it”. Thus Aldi and Lidl are very similar.
Unfortunately this turned out to be a myth! Shame I rather liked it!
Do you have Lidl in the US too?

Creamy keto fish casserole – 8g

1 tbsp olive oil
8 oz broccoli
3 scallions
1 tbsp small capers (I didn’t use)
½ oz. butter, for greasing the casserole dish

12 oz. white fish, in serving-sized pieces
2⁄3 cup heavy whipping cream
½ tbsp Dijon mustard
½ tsp salt
1⁄8 tsp ground black pepper
½ tbsp dried parsley
1½ oz. butter

  1. Preheat the oven to 400°F (200°C).
  2. Divide the broccoli into small florets, including the stem. Peel with a sharp knife or potato peeler if the stem is rough.
  3. Fry broccoli in oil on medium high for 5 minutes, until golden and soft. Season with salt and pepper.
  4. Add scallions, finely chopped, and the capers. Fry for another 1-2 minutes and place the vegetables in a greased baking dish.
  5. Nestle the fish in amongst the vegetables.
  6. Mix parsley, whipping cream and mustard. Pour over the fish and vegetables. Top with slices of butter.
  7. Bake for 20 minutes or until the fish is cooked through, and flakes easily with a fork. Serve as is, or with a luscious green salad.

Underneath the hollandaise is bacon, eggs and asparagus. Hollandaise is made from egg yolks, and while they’re being blended you pour in hot melted butter to cook the eggs, and lemon juice, and my husband adds a little bit of Cayenne pepper and salt. Absolutely fantastic!

Italian Meatball Casserole

Daikon Mash topped with Meatballs, Marinara and Mozzarella Cheese. I am very happy with how this came out, a new keto comfort food favorite. I made it all from scratch and created a recipe for the meatballs because I think they’re worth sharing. :man_cook:t3:
