What did you Keto today? Part Deux!

(Susan) #4672

A couple of meals for this week:

Fried cabbage, broccoli and pepper steak

Keto chili, two kinds of cheese, guacamole and sour cream with baked cheese chips.

Happy Birthday Heather, I’m sending you a donut.
The donut recipe is posted above.
The caramel sauce I have found can only be made with allulose, any other sweetener went grainy for me. The caramel sauce is better than anything that I have ever tasted and so simple.

Keto Caramel Sauce
1/2 cup Allulose
1/8 cup butter
1/4 cup heavy cream
1/2 tsp vanilla
Pinch of salt

Place Allulose in a saucepan over medium low heat and melt stirring constantly until light golden brown. (sneak up on the heat, don’t let smoke)

Stir in butter

Stir in cream

Stir in vanilla & salt
Store in fridge

The chocolate drizzle is my standard 100% coco squares
1 4 ounce bar
2 Tbsp coconut oil
2 Tbsp sweetener
Put the ingredients in a measuring cup and microwave till melted
stir well and pour into a squirt bottle to use as needed.
I store it in the refrigerator.

Cream Cheese Icing
1 8 ounce block of cream cheese
1 stick butter
1/4 cup sweetener
1 tsp vanilla
juice from a lemon wedge
Put all the ingredients in a deep mixing bowl and whip with the beaters until well combined.
Store in the refrigerator.

Note: Adjust for sweetness on all the above, we find that we don’t need things sweet anymore. We have the caramel sauce, chocolate sauce and cream cheese icing in the fridge all the time for a quick dessert topping
Enjoy

I love weird combos!!

(Cathy) #4675

Have you tried making your own mayo? That way you can control the ingredients. A simple recipe of egg yolk, avocado oil and maybe a tad of mustard - could help …?
Sorry. I see this idea was posted. Wishing you luck in finding a mayo that you can eat.

(Steaks b4 cakes! 🥩🥂) #4676

Hi Cathy yes I have…all my mayo is made by me. I never buy shop bought stuff

(Heather Meyer) #4677

Leftover chicken alfredo zoodles:heart::heart::heart:

(Diane) #4679

Sausage and ground beef burgers seasoned with garlic & onion powders, and Frank’s original hot sauce. The burgers are dressed with sautéed onions, mushrooms (pretty over done), sharp cheddar and bacon. Served with homemade barbecue sauce made from no sugar added ketchup.

Yummy brunch, cause I’m out of eggs.

Nice big gammon steak topped with a fried egg, served with fried mushrooms and green beans. I drizzled some ghee on top for a change…not bad actually :woman_shrugging:

#4683

That egg is so perfect

Sirloin with lobster tail and sauteed green beans with everything drenched in butter. Yum!

Nice. I actually thought it was a Steak. Nice color.

:+1: … Looks very tasty indeed.

  1. That pork looks delicious
  2. That white plate is gorgeous

(Jane) #4687

One of may favorite plates since I am also a beekeeper!

My husband is home while I am traveling on business and he’s being a good boy on keto while I am gone… at least what he is willing to admit

He’s fasting today for his weekly 36-hr fast so I guess I’ve finally converted him to the darkside. muah-ha

(Full Metal KETO AF) #4688

I finished the Chili Rellenos Poblano recipe. I hope some of you enjoy this. :cowboy_hat_face:

(Full Metal KETO AF) #4689

How does that work for you, keto and honey? Do you still eat it? I have a keto friend who refuses to give up her 1/2 tsp of honey in coffee (yuck ) because she’s convinced it helps her pollen allergen intolerance. But I have read that mostly people are allergic to grass pollen and usually not the flowers the bees are feeding on. :face_with_monocle:

(Karen) #4690

Actually home for dinner tonight so I cooked some tuna, cabbage salad with sunflower seeds and bacon, and some roasted vegetables. A little over roasted. Still trying to get the smokiness out of house

(Jane) #4691

I didn’t harvest any this past summer - left it all for the bees. My husband still uses small amounts since he can tolerate over double the carbs I can get by with.

And if I ever have a large harvest I will make mead! Haven’t made any in years but still have all the equipment to ferment and bottle.
