Nuggets breaded with pork rinds and parmesan, fried in coconut oil and dipped in hot sauce and blie cheese dressing.
Stuffed with cheddar, cream cheese and chopped jalapeños.
Marinated in hot sauce, pan fried, dipped in homemade ranch dressing.

As someone else said…add lots of butter, cream or cheese, and you can turn lean meats keto :slight_smile:

I still buy breasts. I personally don’t like dark meat (even though I know it’s more keto -friendly), I’ve just never liked the taste of dark meat. So I like to coat them in a mixture of parm/almond flour then fry them in coconut oil. SO much better than traditional chicken strips! All the recipes above look really yummy! I’ll also sometimes make a loaded cauliflower casserole and add some pre-cooked chicken.

LOADED CAULIFLOWER
Ingredients:
1 large head of Cauliflower cut into bite size pieces (approx 6 cups)…
6-8 strips of bacon cooked and crumbled (Cooked in oven at 400° for 20 mins)
6 Tbs chopped Chives
1/2 cup Mayonnaise
1/2 cup Sour Cream
2 cups Colby Jack Cheese ( may use cheddar)
8 oz container sliced mushrooms
Directions:
Preheat oven to 425°
In a large pot boil water and cook Cauliflower for 8 - 10 minutes, drain and let cool.
In a large bowl combine sour cream, mayo, 1/2 of crumbled bacon, 3 tbs chives, 1 cups of cheese,mushrooms and cauliflower and mix well… place in baking dish and cover with remaining 1 cup of cheese and rest of bacon crumbles. Bake for 15-20 minutes until cheese is melted. top with remaining 3 Tbs chives and serve.

Chicken alfredo is another good option. I make my sauce with parmesan, butter and heavy cream. Add in mushrooms, garlic, italian seasoning, chicken. Serve over zoodles or spaghetti squash.

This recipe is also really yummy. I like to serve it with cauliflower rice.

I make em keto! I have tried without a crust and almond flour but I bet pork rinds would be awesome.

Oh yeah! I definitely like the idea of using ground up pork rinds. Saw a video where a lady kept hers in a vacuum-sealed jar ready to use.

I still have to buy these because hubby is not Keto. So for me to not have to cook totally separate meals I have to adjust mine to accommodate my fat needs without destroying his health LOL. It’s a balancing act! I’ll stuff mine with cream cheese, bacon, use alfredo sauce. I have become addicted to avacado oil!

Slather with about 150g of Philly or other cream cheese, wrap in foil into a tight little package and place in the oven on Gas Mark 6 for about 40-50 minutes.

Simple, and tasty.

I also do this with pork chops (as I did last night).

What about a Chicken Parm type recipe?:yum:
Dip in eggs, dredge in crushed rinds & fry.
Top with some marinara ( I like the Rao’s brand) & some mozzarella cheese. Then bake in the oven to heat the sauce & melt the cheese.

You could do zoodles or just serve it alongside a salad or some “loaded” broccoli.:yum:
