Can anyone recommend your favorite recipes that will result in Keto ice cream that (1) tastes like ice cream, and (2) has the consistency of ice cream.
I’m not looking for easy. I have an ice cream maker. So far, I’m 0 for 6 and have produced various substances that are almost but not quite entirely unlike ice cream. I’ve learned to avoid any recipe that advises taking the substance out of the freezer and letting it sit for 15 minutes so as to render it soft enough for a chisel.
I just made the vanilla ice cream from Martina Slajerova’s Fat Bombs, which can be scooped with a scoop but is made with coconut milk and tastes suspiciously like coconut milk. I’d love something with its consistency but with an ice cream taste. Appreciate all suggestions, and thanks!!
