Greek salad with a couple ramekins of olives and half a shot of olive oil. Fueled me well at work. Feels good to increase vegetables and eat more freely, less strict!

System seems to be getting better today, and I’ve been trying to get some foods in me today. Had some Eggplant mini-pizza’s, followed by a New York Strip Steak. … I still need to find out if I can make a nice sauce for them. I used to use A-1 Sauce, but have never even checked to see what the carb count for it is? Just been eating them with either Mushrooms, or plain. (But I do like the taste of butter fried Steak)

The Everything but the Bagel seasoning is from Trader Joe’s. If you don’t have one near where you live, here’s a copycat recipe I found online: https://www.perrysplate.com/2017/06/diy-everything-bagel-seasoning.html

To make my cauliflower-mash, I take one pound frozen riced cauliflower and put it in a microwave safe bowl. I add a couple of tablespoons butter, a couple of tablespoons heavy cream, some salt and pepper. Cover the bowl tightly and microwave for 6 minutes. Take out and stir. Cover and microwave 6 more minutes. Take out and stir. Return the bowl to the microwave, uncovered, and cook a final 6 minutes. I’ve found I need to cook it this much (covered to get it soft enough to really blend smooth at the end, and uncovered to dry it out a little so it’s not watery).

I then add 2 to 4 tablespoons sour cream and 1/4 to 1/2 cup sharp cheddar (or more or less, to your taste). I find using sharp cheddar really makes a big difference in how much I like this mash. It seems to either complement or cover up the cauliflower flavor the best of any cheese I’ve tried. You may find you like another cheese better.

I use a stick blender and mix the hell out of it, scraping down the sides as needed, before blending some more. I blend until I get it really smooth. I didn’t like the results I got in my blender. The food processor I have didn’t work well with this small amount. The stick blender gave me the best results. As a bonus, it’s also really easy to clean up. Since the sour cream and the blending cool down the mash, I reheat it in the microwave before serving.

This is so filling, I’ve never been able to eat more than half of this, unless it’s all I eat for dinner.

Hi Alex- I’m not sure which meal you was referring to, but if it was the bacon goats cheese salad then yes. Bacon all cooked and crispy and then brought to work for lunch.:blush:

Taco salad! So good it was gone before I thought to take a picture. My new keto friend is teaching me to cook meat while I teach her about keto. It’s a good system!
