What did you Keto today?

Mini cheese bread made with coconut flour. Topped with more cheese, pepperoni and pepitas. Reminds me of cornbread.

(Jane) #8981

Making some meatballs with ground lamb using my old recipe sans breadcrumbs. Will dry fry some Shirataki noodles and smother it in Rao’s Ariabatta sauce. Will edit and add a pic once it it done.

The Pork Rind Chicken fried steak and Keto Gravy is one of things I was looking at making for my wife. But will just need to locate the recipe I saw again. Believe it was either Keto Vale or Diet Doctor. … Like TJ says, it doead looks good!

(TJ Borden) #8983

Okay, seriously, I need to know how you did it. I can’t stop looking at that picture and drooling.

(TJ Borden) #8984

And where would that recipe be? I’m picking up my annual supply of hatch green chili’s this weekend, and it seems like they would go quite nicely in that.

(Jane) #8985

Hatch chili’s would be awesome in these guys! I made a half recipe to try it out. I think I’ve got some hatch chili’s from my garden in the fridge if they haven’t gone bad. Might have to make another half recipe with my peppers!

Bookmarked for later.

(TJ Borden) #8987

Same here. Those look too fucking good to be Keto

These https://alldayidreamaboutfood.com/low-carb-cranberry-jalapeno-cornbread-muffins/ ones are awesome too though they do stick a little - possibly because of the changes I made to the recipe.

I don’t use jalapeno or cranberry - I add small cubes of cheddar, a decent (or indecent depending on your tolerance) amount of chopped chipotle & spring onion. Smoky/sweet loveliness

,seriously, I need to know how you did it.

Crushed up some pork rinds, Coated the steak in egg, covered in the crushed pork rinds and then fried in a pan. For the gravy I did bacon grease and butter, added almond flour to make a roux of sorts. Then I added milk and cream cheese. Sorry I don’t have exact amounts, I always wing it and don’t measure. Also salt and pepper to taste

Good on ya!

I get my staffordshires’ food from a feed store. I get some strange looks from the owners there. I keep asking about low carb dog food. They haven’t a clue. ā€œHere you go, this one has rice, peas, cornā€¦ā€

I explained to them that I’m eating healthy now, so I’m also treating my dog as well. I want him to eat good. It’s not expensive for him to eat the best food for him. Just need to stay away from the crappy grain filler.

Hades (my 7 yr old Staffordshire) loves it that I’m eating keto. I just have to be sure he doesn’t get any garlic, onions, or avocado from what I’m eating.

He recognizes the pork belly when I pull a slab out of the freezer. Makes him happy when I cook it.

We had a schipperke. He was not showable, but so friendly and personable. Had him for 14 years.?

People are upping their game. Gorgeous dinner!

Ours is mostly schipperkie but mixed with something. He was a rescue (all of ours are ā€œspecialā€ case rescues). It was after the third time at a dog park where someone said he was a cute schipperkie that I finally looked it up and realized that’s what he was. When we rescued him, they thought he was a Jack Russell/chihuahua mix. Definitely the smartest dog we’ve ever had. If his brain was in a 50lb body, he’d be unstoppable.

Thanks so much Karen. I think being part of this community has inspired me to get get creative. There are endless possibilities which I’m starting to discover. I tried to make a keto olive bread last night ( it didn’t turn out very good lol:weary:) however I will persevere.

Ours was from a friend. Her sister bred them. But he was not showable and my friend wanted a ā€œrealā€ dog. So we got him. His name was Skeeter. Very sweet face. Fat when we got him. They snacked him a lot. Table food.

(TJ Borden) #8999

That’s sad. All I’ve ever had is mutts, and they’ve all been great dogs. I’m glad Skeeter found a good home with you.
