(it’s basically cooking your french fries in a brine, sous vide to get them extra fluffy inside and extra crispy outside).
Thinking of doing this for my next Jicama experiments - both for baking as well as jicama fries. :slight_smile:
I’ll leave the sugar out of the brine though - jicama’s already sweeter than potato…and we certainly don’t want there to be any potential of absorbing any additional carbs!
