Smoking a bunch of meat all at once and storing it portioned out is a quick and easy way to get delicious and fatty meals in a hurry.

Goooooood morning keto world! I found ground pasture raised pork over the weekend and turned it into breakfast sausage. I can’t seem to find sausage without sugar in the market. Leftover guacamole from my Cinco Saturday on my fried egg. Have a great day!
I am feeling quite amazed right now. Not only because the dinner I made was so freaking delicious, but more because of how I reacted to eating it.
I just completed a 48 hour fast, and prepared these garlic-parmesan wings with garlic aioli for dipping, plus some cheesy cauliflower on the side for my dinner. I put 7 wings on my plate, sure I would be going back for seconds. I’m a girl with a very healthy appetite and hey, I haven’t eating since an early dinner on Saturday!!!
I ended up putting one wing back.
That. Is. Unheard. Of.
I’m not kidding. I always eat what’s on my plate, and honestly, this plate was not exactly over-flowing with food by my standards. Probably sounds like I’m making a big deal of something not that earth-shattering, but for me, it really was mind-blowing.
And by the way, the food was super yummy.
An epically failed attempt at @carl’s chicken skin nachos. I think my chicken skin had too much fat. It never got crispy and instead just filled the kitchen with smoke. I had already made the cheese sauce so I figued Id throw it on a plate anyway.
The skin ended up being more like noodles with a cheese sauce. Not the worst actually. Probably won’t be a goal in the future, but I wasn’t a waste.
I had to do my skins with the broiler to get them crispy. Just be careful or they will burn very quickly.
I used this recipe this time. I prefer cream cheese to the mascarpone. If the cauli-rice is not the freshest, it covers up that strong flavor the cauli can have.
What kind do you have? Looks like something great for the truck. How much current does one pull?
