Roast beef and jalapeno cheese rolls
What did you Keto today?
I ended up doing a 46.5 hour fast. I’m very happy with how it went. I broke it with some sopressata, mozzarella, an avocado and some cheddar.
We decided yesterday on a last minute weekend getaway to the family “cabin” upstate. My husband loves to stop at the local Arby’s on the way. Was sure to do my research beforehand and knew exactly what to order. (Which sort of blew my husband’s mind because normally it takes me forever when looking at any menu to decide what I want!!) Got their “Three Cheese Steak Sandwich” without the crispy onions, the sauce and the bun, plus a side salad with Buttermilk Ranch (of which I used half.) According to the Arby’s “Build a Meal” website, it’s about 6 net carbs.
Thanks, I cooked it at 131f/24h then seared on a hot gas grill. Make sure you double bag your long cooks. It’s worth it.
So, I finally got around to trying the pickle-dog tonight.
Yep, this is going to become a regular thing.
This is what happens when you love to cook but you’ve taken a new job almost an hour from home, have 2 kids in baseball, and just don’t have 2 hours to cook a proper meal… but hey, it was pretty darned tasty.
No recipe.
What I do is wilt fresh baby spinach in ghee (or whatever fat you have)
Drain it well.
Sautee some diced onion.
Add chopped tomatoes and cook that mess down until all the water is cooked off.
Add some peanut butter, cook that mess for a minute or so. Turn off the heat and add the spinach. Mix well.
How much peanut butter? It’s up to you.
I go light
Gearing up for a 72 hour fast after dinner tonight. Started at the gym for an hour and a half then som BPC and eggs!
Away for the weekend so doing more eating out than usual. Started the morning with an avocado while my husband slept, then off to this for breakfast:
Description from the menu: Prosciutto Omelette with provolone, mozzarella and spinach. Hold the toast and the potatoes, plus a side of bacon please!!! Had a cup of coffee with one tiny 1/2 & 1/2 because they had no cream.
A work in progress.
Pork belly, Texas style brisket rub, LeChef twisted. Pepper, salt, paprika, onion, garlic, cinnamon, lemon zest.
If only I lived near Ernest and could use a smoker in his arsenal.
Really need to learn how to make smaller burgers, hate wasting half, with all the bbq’s going on I had to have one.
some amazing looking stuff.
My wife thinks the chicken breast is the best piece so I let her cook up some, I then melt a stick of butter into a table spoon of coconut oil and in goes about 10 big chopped cloves of garlic and some fresh parsley or oregano. Then slice the chicken breast and pour on many spoons full of the butter sauce. Keto Kiev for the lazy like me.
Thank God I just had my last meal of the day!!! This eating more than one real meal is for the birds.
Again, we are away for the weekend, so I’m sort of following my husband’s lead and we’ve eaten out both breakfast and dinner today. I think I did pretty well - I’m not tracking but I’m pretty sure my carbs would be below 20 for the day. I ate more than usual, but nothing off-limits.
For dinner tonight I went with a green salad and a large Ribeye. I did have 2 vodka and iced teas (sugarless tea of course.) So while not perfect and definitely not being as good as I have been or want to be, I think I did OK for myself considering this is a little mini-vacation. Pretty sure I was high on both protein and calories today, but it’s OK. Need to keep this “do-able” and not let it wreck my life, right?
Honestly, only posting the pic of the ribeye because it’s so darn pretty!!!
A meal of 70/30 with my ghost pepper sauce, fresh jalapeños sautéed in butter and some left over thin sliced hog jowl. And a side of green beans with bacon juice.
