season with Salt the night before.
Right before smoking, rub with ghee or any fat and season with pepper and a little Chipotle powder.
Smoke at 225-250. Plan for at least 8 hours.

NY Strip test Sous Vide @rustyk61 :wink: (sorry for the lack of jalapenos!). It turned out a nice, tender medium doneness. Flavor was totally on point. Next cook, I think I’m going for med-rare for a more pinky middle, but I didn’t hear any complaints on this first go round!
