Lunch is a spring greens mix salad with blue cheese crumble, half an onion, chopped walnuts, 4 chopped slices of bacon and a maple vinaigrette dressing. :slight_smile: (going to tweak that last one for next time - try using bacon grease rather than olive oil as the fat source for added flavour) :slight_smile:

Edit: YES!!! The dressing is much more savoury with melted bacon grease rather than olive oil - SO good!!! :slight_smile: It’s easy - Melt 1-2T Bacon Grease, add your 2T low-carb syrup, 1T ACV, combine and get it off the burner quickly (the syrup will have a low smoke point) :slight_smile:

We have a super similar lunch!

Mesclun greens, blue cheese, swerve and cinammon pecans fried in butter, and a homemade poppyseed dressing. We should compare!

California spicy crab stuffed avocado!
INGREDIENTS:

2 tablespoons mayo
2 teaspoons sriracha, plus more for drizzling
1 teaspoon chopped fresh chives
4 oz lump crab meat
1/4 cup peeled and diced cucumber
1 small Hass avocado (about 4 oz avocado when pitted and peeled)
1/2 teaspoon furikake or sesame seeds
2 teaspoons soy sauce
Mix, stuff and top your avocado halves!

Beef (brisket) stew. A few carrots and onions, but mostly just meat. It was more soupy so I whisked in xanthem gum, that stuff is amazing.

Ohhhh my! Open faced tuna melt (on a slice of keto bread) and steamed asparagus salted and buttered. I’m on day 11 of this journey and for me this was more satisfying than the steak and spinach salad last weekend
