Keto date night in; fattest steak in store with lots of pepper and salt, asparagus, pork sausage and eggs cooked in beef fat with a dry Sauvignon.

Went to Trader Joe’s this morning and purchased a couple cheeses - a smoked gouda, and some sheep milk Manchego. Also got one of their tasty small hams. It’s a newly remodeled store and they appear to have many new items (such as riced cauliflower) that I’ll have to more carefully examine.

Then I walked down to the regular grocery and purchased an Easter special rib roast for under $5 per pound. It looked really good. I came home and cut it into several nice large steaks with a gorgeous cap, and popped some in the freezer. Oh my.

edit: Filed under the category of ‘I’ve got good news, and bad news’ – Unfortunately, fat adaptation is rearing it’s ugly head, and I have no appetite, lol.

Grilled a Salmon Fillet on a cedar plank. Also made a keto sauce by reducing a dry red wine and adding a bunch of butter. Super happy with the results. It was smoky and the sauce (although borderline high in residual sugar from the wine) was a nice treat in moderation.

The ribeye steak I’m saving for Sunday was just too large - almost a pound and a half. I just finished dividing it into two and am marinating it/them. Both parts have ample fat. One is mostly cap, the others the eye but with ample fat around it. Both are destined to bathe in sous vide.

I might go to another grocery tomorrow with ribeye roast Easter specials and buy another to cut for the freezer.

BBQ pork rind nachos. I melted marble cheddar on pork rinds, piled on sour cream, BBQ pork, and a little pico de gallo. I ate this for 3 meals straight it was so tasty :blush:

Yes, I use the microwave for holding stuff, cabinet. I’d never turn it on with anything metallic.
