My first attempt at making @richard’s bacon recipe. Came out pretty salty, but otherwise AWESOME. I need more practice, but unlike piano lessons as a kid, I think I’m going to enjoy practicing.

Was caught in a bind having to stay late at work after a fast and was pretty ravenous and didn’t want to make a poor choice. Quick trip to European deli round the corner, the fattiest peice of speck (with all fat, skin and collagen attatched) and four spoonfuls of coconut oil and I’m stuffed :slight_smile:

They are the Diet Doctor buns, only I sub out 1/4c of the almond flour for Oat Fiber. Gives a better tooth to me and lowers the carbs a little. I also pat 'em down like hamburger patties so they don’t puff up into a ball. It’s a very forgiving recipe and the bread is pretty dense.

thanks gonna try. i have been using a bagel recipe which is mostly mozz cheese and some almond flour and eggs but it is so messy to make been looking for a more bread like recipe. is the psyllium husk readily available

also do you use parchment paper or greased pan ?? could it go in a bread pan to make a small loaf ?

Sure. I got mine next to the Metamucil at Walmart. Just be sure to get the unflavored and powdered.

I wet parchment paper. And I wouldn’t try a loaf. It’s very dense. I also use my microwave convection oven to bake. Because it’s smallish, I bake for 65mins and let the buns cool in the oven.

I find that I don’t have to refrigerate them. It seems to make them more stable some how. And I love my oat fiber. Use it whenever I can!
