Don’t have pics of what I ate today. But I can tell what I ate. Breakfast: BPC Lunch: 15 pepperoni & 3oz cream cheese Dinner: Baked Spaghetti without the noodles

I sauteed in some avocado oil
6 cremini mushrooms, rough chopped
1 cup of spinach, rough chopped
1 clove of garlic, minced
1/4 cup onion, chopped
1 rotisserie chicken, meat chopped
1 zucchini, mandolin sliced
1 can enchilada sauce
Cheese of choice
I sauteed veggies in avocado oil. Layered enchilada sauce on bottom of casserole dish. Spread zucchini on top of enchilada sauce. Sprinkled cheese, veggies and chicken. Topped with more zucchini, enchilada sauce and cheese. Covered with foil and baked at 375 for 20 minutes then took foil off and baked for additional 10 minutes. I made a mini one for myself and a big casserole with corn tortillas for the fam. I served it with sour cream mixed with some chipotle in adobo sauce.
Finished off some leftovers. All Headbanger’s Kitchen recipes: cream of mushroom soup topped with crispy fried oyster mushrooms, butter chicken wings, and paratha (naan stuffed with cheese, onions and cilantro - so so good).
Ribeye and shredded cabbage cooked and browned in the renderings of pig jowls and butter. (not pictured was dessert … 2 squares of Lily’s w/ 2TBS of [2 ingredient] Peanut Butter)
I do strict OMAD so if it looks like a lot, it is because it’s all my calories in that one meal.
Dinner last night: 2 eggs, green beans in butter, leftover pork shank.
So excited by the shank that I’m close to ordering more.
Italian sausage and cabbage casserole.
Not the prettiest looking dish but the cabbage caramelized in pork fat was delicious. The recipe called for using butter but I used rendered bacon fat instead. Yum.
Sadly other than a small nibble, I didn’t end up eating it because I’m in the middle of a fast and 72 hours in, I figured I could keep going. But with sausage, cabbage, pork fat, salt, pepper, garlic powder and chili flakes, what could go wrong?!

Had a Huuuuuge Keto day today. I needed to get my grind on and my Inova Sous Vide was delivered. Perfect timing for my first cook.
So here’s a walk with me through my keto day…and I’ll mention here that I used my homemade mayo and roasted garlic (which I made a couple of days ago) in the burgers, which turned out awesome btw!
