Had the chili above only with two ounces of medium soft goat cheese (like chalky cream cheese) melted in. Very nice.

After cooking a lot of keto the past few days, today I had to do some delayed clean-up in the kitchen. Ack! Cooking keto certainly puts a greasy film on so many things.

It’s literally a dirty job, but it’s got to be done. The luscious foods make up for it however.

I just saw this video for Keto Carbonara from Headbanger’s Kitchen the other day and really want to try making it. I’m going to make his butter chicken wings this weekend.

I think I’d still make an effort to take some moisture out of the noodles before using them. His suffered the same wetness that mine did. Definitely worth another try.

I have a zucchini sausage casserole that I make sometimes and I will let the zucchini sit overnight in a colander with a bowl underneath with something heavy weighted on top of the zucchini. I started doing this when my first couple of attempts resulted in soupy casserole. This works like a charm. I think you can also put it in a colander for a shorter time with salt to draw out the moisture.

Sous Vide Sirloin Steak on a bed of tallow fried Broccoli & Chorizo with Cheddar crisps.

Followed by Blueberries & whipped cream with crushed pistachios…

I am stuffed. Honestly guys I don’t think I can take much more of this weight reducing food every night!

I just bought some after a long wait (due to price - had it in my Amazon wishlist for a while), because I watched Hifalutin’ Low Carb’s cornbread battle on Youtube. Can’t wait to try it.

I think you’ll be happy with it. I was ecstatic when I got my first whiff and approached Nirvana when I actually used it in that cornbread recipe. It compliments almond meal perfectly the for texture, which is why I suggested it for Tamales. That’s something that I have in the works, on my long list. I think it’ll be just the ticket! Busy night, one son had baseball practice, I had theater rehearsal so for myself I made another big pot of jambalaya that could slow cook while we were gone.
This time I added in more cayenne and was generous with the hot sauce and red pepper. I had some chicken andouille sausage and another kind of chicken sausage along with some leftover chicken that went in there. The rice is, of course, cauliflower.

I love this pot, it’s an old Belgian one that had belonged to my stepfather. I have no idea how old it is but my brother got a little irritated when I got it. :smile: We’re both cooks.
