Made a three egg omelet for dinner. 1 ounce of really sharp cheddar, half an ounce of cream cheese and two strips of bacon chopped up.
Overstuffed, but tasty.

Salmon Patties made with real salmon(not canned) Pork rind bread crumbs and fried in bacon fat. Coleslaw on the side.
Mascarpone in coffee?? How was that?! It sounds like it would be good. I love mascarpone.
Pork chop, cabbage with onions, buffalo sauce (of course). Chop slightly overdone but the fat, cabbage and sauce made up for it…

I was craving a ribeye, and the local store just happened to be hosting a massive sale. Bought five, froze four, fried one in butter. Topped with a cream sauce made with butter, blue cheese, spinach, and bacon bits… oh goodness.
This Pizza turned out great! I made it on a 5 carb wrap, which I fried lightly in olive oil on both sides before adding the toppings.
For pizza sauce I used an olive based spread that also contains capers garlic and olive oil. I will definitely be using this again for pizza. The toppings are pepperoni mushroom green onions and basil.
I tried to do a crispy cheese crust around the edges but I cooked it about 30 seconds too long. It was still good and because the pizza had a soft and thin crust the contrast gave it a pleasing texture. I cut it into slices with scissors. I think this would make a great party food.
Nice! Ever tried the Fathead crust? It’s maybe a little more work but very good. My son will actually request it.
You don’t even have to do a crust if you like it thin. This pan method is surprisingly good! I’ve posted it before…
I forgot about this! Thanks for the reminder. Kids are away this weekend so I’m planning some kitchen experimentation.
I’ve got a stuffed pork tenderloin recipe I want to try before springing it on the kids so I’ll be posting that hopefully Saturday.
