What did you Keto today?

“Stone Age” paleo nut and seed loaf - walnuts, pecans, sesame, sunflower, pumpkin, hemp, & flax seeds, held together with eggs & olive oil. VERY dense, heavy, rich and filling - especially topped with a full tablespoon of butter (I had mascarpone on a slice last night & I want to try cream cheese to see which I like best). I found several nearly identical recipes, first on a Scandinavian food blog, Nordic Food & Living, then on eHow.

Can you share the recipe? This looks delicious!!

Italian sausage with spinach, tablespoon butter, blue cheese dressing dribble.

I grind my own chuck, so tonight was grilled hamburgers topped with baconaise (see above) and Country Cole Slaw… :yum:

2KD Pad Thai… Was awesome!

This looks so delicious! Do you think it could be made without walnuts and pecans? (I’m allergic to some tree nuts)

Egg roll bowl :stew: my wife got the recipe from some keto site lol but it’s really good and scratches that Chinese take out itch.

I used this one:
https://www.ehow.com/how_12343770_easy-make-bread-recipe-healthy-nuts-seeds.html

This one uses metric measures:

The recipe uses a ratio of 2 cups nuts to 4-5 cups seeds. I had 5 kinds (actually six - left out the chia this time) of seeds I wanted to use, so I did less than a cup of the first four, then “topped off” each measuring cup with hemp hearts. My glass loaf pan was FULL with only 4 cups, so make sure you use a large loaf pan if you use 5 cups of seeds.

I’d like to add that the nutrient density of this recipe is as dense as the loaf itself! I was quite impressed with how nicely filled in my micros were as well as macros.

Hi Pete, I love Italian Sausage, yours looks awesome!! Was wondering what the Blue Cheese was? Thanks

(Bob Lowrie) #4489

Blue Cheese looks great, what was it?

Royalty for lunch today

(Pete A) #4491

Just this. I could make my own but use this as a condiment for both lunch/dinner.

At an Asian buffet: salmon, chicken, shrimp, broccoli. When in town I usually hit this place once a week. They like me there even though I take a big piece of salmon. Can’t beat the price - $7.25 for lunch, with tax it’s $7.76 if you drink water. They gave me a $2 off coupon for Christmas, and I used it today. I handed it over with the rest of the money, and they gave the coupon back to me… unreal.

Not the most beautiful food picture ever. This is the turkey leg confit in a pressure cooked molé. What it lacks in visual appeal, makes up for in the flavor department.

MyFitnessPal suggests: 6.5g net carbs, 41g protein, 47g fat.

BLTs with the kiddos, major win.
And the hubs asked to have a giant salad for supper with chicken, cheese, bacon… Another win!
