Was craving vegs and made loaded cauliflower rice tonight for the first time! Blended the florets only but still a bit wet. Any suggestions? Do u really need to use a towel to squeeze out the water?
It’s a sunny 77 degrees in Napa Valley, as we sit sipping wine and knoshing. The joy of eating keto in wine country! Best Surf and Turf ever – carpaccio and then followed by a beautiful seared halibut over haricot vere, to which I added a tablespoon of butter!
Here’s my eye of round steak…yes, I know it’s a lean cut @matt and that’s why I made my first ever Bearnaise to go with, which was pretty fuckingawesome, thanks to my friend who sent me the following video by Julia Child! @Rian There’s no stopping me now!

Um … aren’t those pecans? Not that I wouldn’t smoke them, too! I’m curious - do you have a seasoning recipe?
What are the pork rinds seasoned with? Are they “carby?” What brand are they?
Today is meal prep day for me. I have some spaghetti squash leftover. Since I’m also (mostly) AIP, I’m going to try a vegan alfredo sauce and I’ll be adding mushrooms and pork belly to the sauce (if it turns out) before putting it over the squash and a burger patty for my lunches this week.
