Well, you may have gotten in an accident on the way here from the southerners not knowing how to drive in the snow!

Being a Southerner might I state that I am happy to not drive in snow. I’d rather live somewhere snow is a rarity than where it’s a barren frozen wasteland for an entire season. I enjoy wearing shorts at Christmas dinner.
In fact, I’m considering retiring as an expat to a country where snow is only on postcards and I’d never have to supplement vitamin D.
I sous vide a chuck steak for 24 hours w/ salt and pepper. Then seperated the chuck steak into pieces and seasoned with homemade Ras El Hanout, and seared it in butter on my cast iron pan. Then I added the bag dripping from the sous vide to the pan frond and thickened with xantham gum and salt and pepper to taste.
Fork tender beef tips w/ Ras El Hanout gravy served with roasted brussel sprouts and bacon.
I like big butts and I can not lie…
I got this beautiful boneless pork butt all rubbed up and ready for the smoker.

I skipped the carrots, onion, and rhubarb (because I didn’t have them), but added lots of onion powder!
We had it last night for dinner and it was so tasty!

In order to reduce the amount of protein , I have changed my breakfast. I’ve made an omlette out of two eggs , 50 g of creamcheese and a tablespoon of ghee .aside a few pecans and more creamscheese…

Sir Mix-A-Lot big ol Pork Butt part 2…
Pulled out of the smoker after 9 hours and wrapped in a towel and put in a cooler for 1.5 hours. (I would normally do 1 hour, but my kid had soccer practice)
Carved and served up with a salad.
