188g 73/27 ground beef, 60g sour cream, 28g cream cheese, and 3 scrambled eggs cooked in bacon fat. Ate the 3 strips of bacon while the ground beef was cooking.

Well, I’ve been craving Oxtails for whatever weird reason ever since my first venture into cooking them. So today was the day! My second go…

I did them again in the slow cooker and My God, the smell not only drove puppy to distraction but I was right behind her this time! :smile:

I served it over some cauli-rice…

Not sure if you got a response to your mash question. I whiz mine with fresh grated parmesan cheese and mascarpone cheese. Comes out as thick as the real thing.

Homemade Salisbury steak pan fried in butter with gravy and veggies. …asparagus Brussels sprouts green beans brocolli and carrots tossed in olive oil garlic and spices and roasted in the oven. Also oven roasted potatoes done the same as the veg for the carbivores in the house lol.

Porchetta on faux risotto

The trick to fake a risotto is to use really strong stock … look at this stuff that came from the bag juices of the porchetta. So full of gelatine which coats the rice and makes it feel like it has been absorbing the flavour. Then you cook the risotto backwards developing the flavour and adding the rice at the end.

2 cloves garlic chopped
7g Spanish onion diced
20g butter
25g enoki mushrooms
25g Woodear mushrooms
50g chopped capsicum (Bell Peppers)
1 tsp Rosemary chopped
75g of pork stock
30ml white wine
1 packet (250g) of Shirataki rice

Fry onions, garlic, peppers in butter till soft

Add Mushrooms and rosemary

Add stock and a little white wine

Add microwave warmed shirataki “rice”

1 serving is 136 kCal, 5g carbs, 7g protein, 9g fat. Add a fatty bit of meat and you have a pretty tasty meal.
