Dinosaur Kale, English cucumber, avocado oil, lemon, salt and pepper. I did add about a tablespoon of pistachios for crunch.
Massage the Kale first before adding the cucumber and nuts.
That looks amazing, and seems like one of those things that is somehow cheating. Perfect example of “boring Keto food”, so deprived.
Update: I did add the jalapenos… yeah, this is going into regular rotation around here!
I just got a spiral slicer last week. Really digging it. So far only my daughter and I will eat the “noodles”, though. I like to make them out of zucchini and yellow squash then sautee them in Kerrygold with salt and pepper.
Will definitely be trying this. That would make it easier for me to make mini pizzas to order for my 3… who can almost never seem to agree on anything.
Fun parent trick: I sometimes tell them they can watch a movie only if they can all agree on what to watch… then I sit back and try not to laugh out loud as they go through Netflix.

Bubba Gump would be so jealous of this salad! Cajun spiced wild shrimp, hemplers bacon, avocado, romaine lettuce, arugula, lemon thyme and a spicy creamy dressing inside the pitted avocado.
I used curly leaf kale, avocado oil, fresh lemon juice, salt and pepper. Then massaged it with a cut up dried chili pepper.
Yum.
It’s a little extra care to keep them but so worth it. I’m wanting to get a few more of different sizes and maybe a dutch oven.
