Restaurant this afternoon. Ordered meat lovers omelette, hold the home fries, brown beans, and toast. Suddenly the cook is hollering over at me…“hey, you want an extra egg in that instead of the carbs?” I’m like, “um, ya, thanks” him, “you like cheese?” Me “sure do.” Him “tomato and cucumber slices on the side good?” Me “OMG dude, you rock!” I am so going back there again! So full LOL!

If that was IHOP be aware that they put pancake batter in their omelettes. Jerks.

One dish wonder - a beef kiolbassa sausage link with collards, fermented caraway sauerkraut (both from farmers market), & sour cream. I sliced the sausage & put it in a pan with about an inch of water and the collards, then cooked it til nearly all the water was gone. Added the kraut to heat through then stirred in the sour cream. Quick & tasty. I think next time I might add some extra caraway seeds.
Salad greens with freshmade Blue Cheese dressing, bacon, tomato, green onion. To follow, a bit of a concoction made from what I had in fridge, with a small amount of leftover onion and carrot, savoy cabbage and some browned ground beef.
OK, what fried chicken recipe do you use, & what’s on the green beans?
Per my wife the green beans were pan seared and tossed with salt, pepper, garlic powder and then covered in shredded Parmesan.
As for the chicken there was no recipe but here is what I did for 8 thighs.
Clean the chicken of excess skin. You can fry this as well. It’s a tasty treat.
I mixed 2 eggs with a bit of water to loosen it a bit. I think I could have gotten away with 1 egg.
I ground up 1 1/2 bags of pork rinds in the food processor. I added salt. pepper, onion powder, garlic powder and poultry seasoning. I didn’t measure any of that.
Dip the thighs in the egg and then in the pork rinds. Get it all nice and covered…Top bottom and sides. Shake off the extra. Put the chicken on a rack to hang out.
Heat up a bunch of lard to 375 and heat the oven to 325.
Fry the chicken for 4 minutes a side then put it back on the rack (Check the oil temp between batches to make sure its to temp).
Once all the chicken is fried, take the rack and toss it in the oven until the chicken is at 180F. For us it takes about 40 minutes. Just use a thermometer to check.
Take it out and let it hang out to cool.
Sprinkle with salt.
That crispiness is insane. People tend to laugh after their first bite. It’s that good.
First time trying an egg-less crust and I really liked it. And was able to use up some leftover pork. Even my 4yo daughter eats it.
Thank you! I asked about the green beans because it looked like some kind of sauce (does keto help presbyopia? ) Do you save the lard between fries?
Yeah I keep it unless I fry something that will flavor the lard too much. Once it’s used up we mix it with seeds and such and make suet cakes for the birds. I am not sure that would work when its warm out.
Yeah, I think if I put suet out here in Central TX I might end up with self-frying birds! At least they’d be keto!
I had a pork shoulder that I crock potted and put it over a bed of cauliflower rice. Also made Keto chocolate chip cookies.

That Kale salad, I poured a bunch avocado oil, salt and pepper and a squeeze of fresh lemon juice. Went in and massaged the hell out of it. It turns dark green
