This was my OMAD from last Friday, which I sent to @tdseest, as he recently posted somewhere that liver was better than bacon. I thought a “kumbaya” of the two, with no onions, was the perfect dinner.

I snipped 5 slices of thick-cut bacon, reserved it, then put 1.25 lbs. of well-seasoned chicken livers, cooked through, then reintroduced the bacon, stirred well, and ate.

Lordy. This is currently my favorite meal, though I still love two 1/2 lb. patties of 80/20 on a hot cast iron pan for a few minutes, and a good strip steak. As chicken livers are $1.20/lb at the butcher I visit, I will be loading up on a few pounds more!

Finally got around to making Soul Bread today. It’s been on my short list for awhile. I used Cooking Keto with Kristie’s recipe on Youtube. When I took it out of the pan to cool, it had that squeaky egg sound :confounded: but it actually has a very bread like taste and texture once it cooled completely. I was very pleasantly surprised on this one! :+1:

Soul bread uses whey which can cause an insulin spike. If you are diabetic or insulin sensitive be careful with it
