Great tip! I didn’t realize aldis had chorizo! My favorite breakfast is eggs, chorizo, Mexican cheese, (can’t think of the name of it but it’s like mozzarella and feta had a baby), poblano peppers and a bit of onion all scrambled together.
Then 3-2-1 ribs
Baby back ribs paired with a nice romaine salad with chart house blue cheese dressing

3 hours smoking, turn up the heat, 2 hours covered, 1 hour back on the grill grate.

So, what temps are you actually talkin about? Smokin is low and slow, I know…turn up the heat to what for 2hrs? And what temp for the grate? Just askin 'cos I may want to seriously try this! TIA
My smoke is about 140 F. The last 3 hours are at 225 F. I have smoked for longer than 3 hours before too. The first 2 hrs @225, I used to wrap a half rack of ribs in foil, but now I just get a big foil pan, place all the ribs in it (usually 3 racks) and cover that tightly with foil. For the last 30 min to an hour I place the ribs back on the grill grate to ‘tighten up’.
Works for St Louis style or baby back ribs. My preference is St Louis style, but couldn’t find them.
I have a wood pellet grill so that makes it easy.
I was ready to smoke…beef ribs but the weather threw me off. So I went for balls…meat balls that is.
