Beef cheeks need to be cooked low and slow. Similar to beef short ribs or oxtail.
I cook cheeks sous vide at 145 degrees for at least 24 hours.

Scrambled eggs with shredded three-alarm cojak and diced & saluted fresh jalapeños. Put under the broiler to melt the cheese and heat the leftover bacon (what’s that, I never have leftover bacon).

No pictures, but, we are doing a binge watch of Sons of Anarchy, Christmas Eve Dinner is going to be, Shrimps and HUGE Sea Scallops wrapped in bacon (Huge is an understatement there were 6 in a pound), King Crab legs dipped in Budda, and Christmas day dinner is Prime rib with rubbed with Budda, Garlic, and herbs, and Cauliflower mash with lots, and lots of budda.

Christmas evening today. I forgot to snap a picture of dinner, but it was delicious traditional homemade pinnekjþtt (cured, smoked and steamed rib of lamb) with mashed rutabaga. If you’re curious what it looks like there’s a bunch of pictures on google, just subtract the potatoes and that’s what I had.

For dessert I had made whipped cream with berries (frozen mix of blackberry, cranberry, raspberry and blueberry (I think)), walnuts. hazelnuts and dark chocolate, and I must say I was very impressed with it. It wasn’t much sweet at all, just a little bit from the berries, but mostly it was nutty, tart and a little bitter which complemented the fatty, savory dinner extremely well, and the combination of the whipped cream and the chopped nuts and chocolate made for a very appetizing texture. Unfortunately I didn’t get a picture before it was (half-)eaten, so here’s one of the aftermath on the kitchen counter.

Later for coffe I had made a cheese cake which I also found very good, if a little sweet. This time I can’t take credit myself since I found a recipe online, the only change I made was instead of the suggested raspberry sauce I made a sauce of the same berry mix I used for the cream dessert. As I said it was almost too sweet, but if I’m honest I prefer cakes that start off really sweet but are too nauseating to have more than one slice to cakes that only become sweet by the time your belly starts looking pregnant.

This is the first time I’ve done any sugar-free baking and I have a lot more confidence in it now. I had planned to try several different christmas cookies and cakes but unfortunately I ran out of time, but now I’m at least pretty confident that I could also make kransekake, which is a traditional scandinavian cake that doesn’t use wheat flour, only sugar that needs to be substituted.

Christmas celebration with the family today, typical Swedish Christmas buffet styled dinner for lunch, with lots of cold cuts, smoked salmon, pickled herring, meatballs etc.
Ended with a delicious saffron pannacotta topped with a quick raspberry sauce :heart_eyes: (Also ribs for dinner :heart:)
It’s highly probable that I’ll spontaneously fast tomorrow :joy:

TOTALLY UNSWEET cheesecake with warm blueberries & whipped cream. Just eggs, cream cheese, vanilla for the filling, almond meal, butter, cream, pinch of salt for the crust.

Sweeteners trigger me to binge but I still wanted something special for Christmas dessert since: I don’t eat dessert ever, haven’t had a taste of fruit since March. So I made this cheesecake which would likely disappoint just about anyone but me, lol. I loved it :smile:
