What did you Keto today?

(matt ) #3511

That sounds amazing

Did you have to add fat? Tallow or anything?

#3512

Yes, It was really really good. Will. Do. Again. I almost spritzed a squeeze of lime over it to cut the richness of the marrow, but the salt and crispness of the leaves took care of that so no acid was needed.

(matt ) #3513

Acid is key in cooking. Under appreciated and misunderstood by lots.

#3514

Agreed. That’s why I had lime in hand. But tasted first. Glad I did. I wanted the richness of the fat more than the balance the acid would have brought. I can’t believe restaurants smear this marrow on bread or toast points. Ew.

Oxtails are magical. Nothing makes bone broth easier and my butcher just lets me have them because no one else wants them!

More noodle soup. We have visitors at this time of the year otherwise it’s not something we get to eat often.

Only difference with my bowl is kale replaced the noodles and two tablespoon of butter added.

(ps. spot the pigs feet)

(david smith) #3521

pork shoulder and beef roast wrapped in bacon
reserve liquid/fat for reheating

slow cooked in covered pan for 12 hours at 190 degrees F
meat is so tender…you can cut the bacon with a spoon
food for a week
freeze or vac pack if you get tired of it
slow reheat to reset bacterial clock after a few days to 200 degrees F

(david smith) #3522

pro clean up tip…if you put a flat pan of water on a rack under the covered pan of meat…the burners will not weld the protein to the pan and cleanup is a breeze…my dog pre-washes the pan first with her tongue

(Marie Dantoni) #3523

My rottie was the best dishwasher I ever had.

(david smith) #3524

A great april fools day joke is the have dog clean plates and them in sight of mark who you live with put plates back in cupboard. When mark complains you explain that the plates are clean when the mark protests that they are certainly not clean you reply that you have been doing this for years.

(Ellie Baum) #3525

That soup looks awesome. You’ve reminded me how much I love broccoli cheddar.

It was SO good! I ended up making the base with a puree of cauliflower, cheddar, sautéed onions, leftover coconut milk, some heavy cream, and lots of butter and spices, and it was amazing! So decadent.

Grilled prime rib and Keto latkes. Covering our holiday bases with family. My sister in law brought a cauliflower version over for me to griddle because her husband is now toying in Keto bc of my progress.
