Steak with lots of fat cooked in bacon grease with some diced bell peppers and a bit of onion, served with grilled/broiled sliced zucchini and Brussels sprouts coated in olive oil and a bit of parmesan cheese. So yummy!

Breakfast tacos. Coconut flour/egg/heavy cream “shell” with garlic and onion powder and thyme. Slowly cooked scrambled ranch eggs. Add cheese and some leaves from my hydroponic garden. Oh and some Frank’s

Green chicken salad - this is a 10 minute meal (if you let someone else roast the chook) and it is the perfect meal to make for someone who complains that Keto meals need some greens :slight_smile:

This is a riff on Carl’s chicken salad. It starts the same way with a Roasted Chicken. Legs and Wings pulled off and put to the side. All the remaining meat pulled off and diced and thrown in a bowl. The next step is also the same, dice up half a head of celery, throw that into the bowl too.

Now here’s where we’re going to detour - instead of adding mayonnaise, we’re going to make up some Genoan Pesto. In a mini-blender (I use a magic bullet) throw in a generous handful of fresh basil, a handful of pine nuts, a similar volume of grated fresh parmigiano reggiano, and then enough olive oil to enable the paste to blend. I also add 2 cloves of fresh garlic … if you don’t like the heat of fresh, you can also use roasted or fermented garlic.

If the chicken is cold, nuke it for a minute to warm it up so when the pesto hit’s it it will spread and coat everything.

The final touch is to dice up an entire avocado and sprinkle it over the top of the bowl - then toss.

Garnish with roasted chicken limbs.

I’ve kept it simple today. Skipped breakfast and had BPC. Just a little bit ago I fixed some country sausage and overeasy eggs cooked in bacon nectar and butter. A meal I would have denied myself just a few months ago. As I sat at the table enjoying every bite I just couldn’t stop thinking about how wonderful such a truly simple meal is.

Gently broke a 6-day fast with chicken broth, a handful of macadamias, and some pork rinds.

Depending on how well that sits, I might eat some more tonight, but planning tomorrow as a feast day, and currently planning to re-start my fast tomorrow night after dinner, and see if I can go another 6 days.
