Pumpkin pancakes with fried eggs and rosemary all covered in goat cheese.
If you haven’t had goat cheese melting slowly over freshly fried eggs, I highly recommend. It was something heavenly.
Cajun spiced shrimp salad with bacon, cucumber, lemon thyme. Served with a dressing mixed with mayo, sugar free bbq sauce and some trappey’s hot sauce. Salty, spicy, crunchy and sweet.
One meal today: Smoked salmon, duck pate, 3 finn crisps, cream cheese, cucumber salad, 2 semi-hard boiled eggs, and little-frozen fudge thingies made from HWC & chocolate and butter. Also coffee with some HWC.
Started keto in October down 25 lbs😁. Found pork belly at Costco this week, cooked for 24 hrs in sous vide seasoned with fresh ginger, cinnamon, cumin, coriander, cloves, chili powder, cardamom, and soy sauce. I fried to crisp it.

So there is a super hipster shopping area in my town with an artisanal cheese shop. I paid through the nose for this tiny jar but man, it was worth it. Especially if I don’t eat the whole jar with a spoon in one day!!

Craved a griddle deli sandwich. Made a porkrind/cream cheese/mozzarella/egg style flat bread. Carmelized a few onions and peppers in Kerrygold and heated some roast beef and buffalo chicken… toasted my bread and melted sharp cheddar and Munster… I’m a happy man.
