I’m having one of those “what did I make today?” moments.

Fried up some cabbage. Added ground beef, peanuts, cream cheese, heavy cream, chicken broth, tomato juice, white cheddar, and taco and ranch seasonings.

Dinner was a Cheeseburger Salad with grass fed 80/20 ground beef, spring mix, red onion, tomato, pickles, cheese and “special sauce” made with Primal Mayo, mustard and half a teaspoon of ketchup.

Grass fed beef liver. Prices have doubled in the last 3 months. I think people are catching on…

Sous vide liver
Get thick cuts. They work better.
Salt and pepper, vacuum seal.
Drop in 140 degrees hot tub time machine (Sous vide) for minimum of 45 minutes. Don’t go over 4 hours, texture suffers.
Pat dry and sear in ghee, hot skillet.

Chicken-Bacon-Ranch (with cheese) skillet. I used to use chicken breasts, but now I use thighs. I cooked about 1/2 a pound of bacon first, then the chicken pieces, then tossed the bacon back in for a couple minutes. You can toss the cheese in then or top it on the plate (which I did) then add some ranch dressing.
