My husband made four crustless pizzas to keep in the freezer for easy meals. We had one of them today. It’s filled with Italian sausage, mushrooms, olives, red bell pepper, onions, Canadian bacon, and pepperoni topped by an obscene amount of cheese. And then another layer of pepperoni. Words can’t describe.

Fried Halloumi cheese, a new keto fav! I fried cheese strips in enough oil to float. Delicious and the texture is like a lightly breaded deep fried cheese curd. I salted them, a mistake… the cheese is salty.

The restaurant menu lists them with 31g of carbs, but im pretty sure that’s total, not net…even still, if it was truly 31g, I can or at least am willing to afford to have them occasionally.

Sous vide fried chicken.
Season chicken thighs with salt and pepper medley. Vacuum seal and let em swim in 155 degrees Hot tub time machine for minimum 2 hours, max 4 hours.
Dry thoroughly and flash fry in 400 degrees oil (I keep refined coconut oil for this) for 1 to 2 minutes.

Crispy crackling skin, no coating necessary.

The bacon onion rings were amazing. The creamy hamburger was very bland. It definitely needs more flavor. I added flake salt and Frank’s hot sauce and still couldn’t eat it.)

Update: So I decided to look over the recipe and figure out how to fix it. I realized that I doubled the hamburger meat, but not the HWC. So I added more HWC and seasoned some more to include my beloved Cajun Seasoning and some garlic powder. It’s definitely better!

This was my husband’s plate this morning: eggs, bacon, and bacon-wrapped jalapeños stuffed with mozzarella.

For dinner today, I had leftover grilled roast with red bell peppers and mushrooms topped with Havarti.
