Lunch salad! Lettuce, baby tomatoes, avocado, bacon, blue cheese and blue cheese dressing. My favourite thing for the last 6 months. ~900 calories of glory.

To all who have mentioned Himalayan Pink Salt, and those Salt Fixers themselves, Carl and Richard, thank you.

I know many of you are old hands at this, but today was a first for me, and this salt is pleasing, satisfying and delicious, with subtle waves of what seems like sweetness and minerality running through it.

Salt and pepper, Sous Vide at 135 for 24 hours, chill and pop in the refrigerator ready to go.
When ready, unpack, wipe dry, grill, pan sear or flash deep fry and eat!!

I get these in bulk at Sam’s Club. Portion them in vacuum sealed bags.

I’ve braised some in my Dutch oven that were cut with the bone but haven’t tried the ones cut perpendicular to the ribs. Looks like I’ll be putting them on my list.

I’ll take these over a ribeye steak any day. I cook them sous vide to tenderize them. Otherwise, they’re still tough if cooked medium rare.

No picture, it wasn’t that pretty but sure was tasty. Grilled a flat iron steak, topped it with KerryGold butter & some Gorgonzola crumbles and a hunk of Parmesan cheese with some pico de gallo as a garnish.
