I cook sous vide from frozen all the time.

Shrimp cooked in garlic butter, chili garlic paste, old Bay garlic & herb
Bacon wrapped Oscar Mayar uncured wieners 1 carb each
Bacon wrapped burgers
Chicken legs cooked butter Bob style

23 hours or so at 155 degrees F. I just cooked it in the package I got from the farmer.
Next time, I’m planning to marinade, and cook it lower and longer.
Yeah too short and too high temp for brisket.
I do mine at 135 for 48 to 54 hours.
Whole pork shoulder 145 for 48 hours and sliced into thick steaks.
you won’t be disappointed. I have two, one of them runs 24/7. Drop a steak in on my way out the door. Come back whenever, sear and eat a perfect Steak.

Edited to report that I feel a little sick to my stomach after this meal. Might have been just a little too much fat for one go. Sure was tasty, though.
Had a day of eating keto in the wild: A chef salad at Quizno’s (I gave the included flatbread to my daughter) and (later) a pico-guacamole grilled chicken from McDonald’s. Both were excellent, but I was just coming off a two-day fast, and food always tastes especially good then.
Backyard eggs cooked in bacon fat and homemade keto scrapple. Not perfect but not bad for a first attempt.
