I made this today from this recipe that was linked from one of @OgreZed 's previous posts:

I used grated Parm because that’s what I had on hand. They aren’t large, I know it’s hard to tell in a photo. They are pretty fluffy and quite delicious though. (There were originally 12 of them, I ate 3 as soon as they came out of the oven.)

Last nights meal with left-overs. … Salad, then picked Snow Crab and Dungeness Crab with a side of fried Cale with bacon, cooked in bacon.

Then cooked a chicken on the Rotisserie, which I took half for lunch today, since I plan to Fast after tonight’s meal, which we are still making.

@Blue1 … My wife asked if you wouldn’t mind sharing the recipe for your Blueberry Muffins. :slight_smile: They look great and they are her favorite.

I just posted the recipe.

I have a couple of relatives struggling to stay on the diet and they’re having trouble with “special” ingredients. Tried to make these with really simple ingredients and they actually came out pretty good. The crunchy muffin top is the best part!

@Callisto Thanks, it was quite tasty too. Took half to work for lunch. I really miss using my Rotisserie. We had put it down in the basement while I was doing some work upstairs and just brought it back up yesterday. So we had to make sure it still worked. :wink:

Bacon wrapped Polish Sausage or kielbasa sausage is pretty good on them too. Might do some of those next week, since I plan to fast again this week.

Well, I plan to fast again this week, so I actually took the Rotisserie chicken for a rare lunch today. Been eating OMAD, but wanted to try doing two meals before starting to see if there’s a difference? … But after someone made my plate tonight, I’m beginning to think FAST will be the last thing I’ll be tomorrow! :crazy_face:

But I almost ate it all, but not quite. But it was good. She did Fried Chicken Breast with Mushrooms in creamy sauce, Fried Brussel Sprouts with Parmesan Cheese, Deviled Eggs and :bacon::bacon::bacon:

Where are the olives? I love that you always have olives and pickles. When I saw this olive bar in my local super market, I thought of you. I’ve been waiting for you to post a picture with olives, but oh well.

Corned pork? At 11 dollars, as compared to 40 dollars for a corned beef, I thought it’d be worth a try. The verdict is in. It was worth a try- but I can turn a pig out a hundred better different ways, so…

But it was pretty enough to take a photo!

We actually had some olives in a separate bowl, since I didn’t have room on the plate! :slight_smile: … But yep, they go well with most anything, and I like the different taste they provide.

But yes, I could use one of those olive bars too! :smile:

I’m always requesting slightly off menu Keto foods at restaurants but it’s never been an issue. This is a brunch of steak & eggs, hold the starches, side of bacon, side of spinach. Perfect!
