I went back for bacon, and a bowl containing cheesy cauliflower magically appeared! The bacon was so excited it fell apart. :smiling_imp:

I bake my bacon a pound at a time in the oven (@400F), about 25 mins (depending on how crispy you like it - flipping them half-way through. IMHO, it’s about the most trouble-free way of making bacon. (and sandwich bags are pretty much the perfect width for storage in the fridge or freezer) :slight_smile:

Then you have a nice clean cast iron pan that you cook your eggs in bacon nectar in. :slight_smile: (I also put paprika on my eggs…can’t seem to get enough of that) :smiley:

For my first meal today I had eggs on toast. I’ve been experimenting with some keto rolls (that look sort of like English muffins and don’t taste weird) and this morning I sliced one in half and toasted it well. Then I buttered the halves amply, and put a ‘stabbed and flipped’ egg (cooked in butter) on each. I had forgotten how good that combination was. It’s literally been years since I ate that without guilt. Toast + Egg + Butter = Yum!!!

Comfort food on a rainy afternoon - hot Italian sausage, grilled cabbage (could have used another 20 mins for some nice charring) and steamed broccoli - all drowning in butter. Wicket Gourmet 5 Pepper Hot Sauce for dipping the sausage. :smiley:

I was feeling like something light like homemade chicken broth with a few eggs and Napa cabbage.

It was satisfying, but there wasn’t much fat so I was hungry in a few hours. This was my answer: Egg salad with cubed avocado mixed in. Pretty good. Definitely fatty.

I found some of those little silicone squirt top thingies at the dollar store and bought a couple. Very handy!
