Fasting today but yesterday for brunch I had a seriously OMAD worthy meal. (I didn’t eat OMAD but this was seriously satiating )
TINGO DE POLLO Y AVOCADO CON TRES HUEVOS! Side of bacon with coffee!

Pork tenderloin that I marinaded in the following:
1/4c fresh lime juice
1 small can of chipotles in adobo
1/2 t of crack black pepper
1/2 t of coarse kosher salt
3 minced cloves of garlic
1/4 c of mixed dried parsley and freeze dried dill
1/4 c third press olive oil.
Blend until it’s halfway to mayo.
2 large tenderloins in this for an hour or so. Roast then sear to 138-145 internal temp. Sliced into disks. Very tasty… nice spice.
Killed a fauxstrami I made out of store bought corned beef brisket point pieces. First go at pastrami, and it came out very good for low effort. Will be making one from scratch sometime this summer.
I have got to be the only one eating chicken hearts and Gizzards in the University cafeteria tonight.
I try to buy fresh when I can. But normally just get a gallon container at Costco for $5
I posted it in Recipes but here’s the link for that post for you. It was good. I used more taco seasoning and less broth.
Feasting tonight. Two bacon burgers, one with blue, one with cheddar, with broccoli. Garnishes of sliced dill pickles and paprika mayo.
Spinach paneer. With skinny pasta brand rice. Dude. I feel like I have rice back in my life. I could probably taste the difference had I had rice recently but I can’t now.
