Not really keto , but I try to keep it low carb - the bento for my son. The problem is , it have to stay fresh the whole day , even if he couldn’t eat it.

No pic, but I had a keto celebration for lunch - chicken tortilla soup sans high-carb options, and a big faijita salad sans shell, with sour cream/salsa dressing and a blob of guacamole. What am I celebrating? We paid off our mortgage this morning! W00T! I just might celebrate at supper, too!

Not exactly on air, but definitely lighter than yesterday. We’ve a fairly large hole to dig ourselves out of, but the first quarter of this year will make things much easier.
Broiled pork tenderloin & Brussels sprouts sautéed in bacon fat.
I’ve tried this before with the sprouts but did it wrong & they got scorched without cooking through. Probably everyone knows already, but if you were like me & didn’t, the trick is to put some water in the pan & cover it to steam them a bit, then when they are tender, take off the lid, pour or cook off the water then add the fat to brown them.
