What Did You Keto Today? The Trilogy!

My first meat was some deli meat yesterday. It was good. Made some bacon tonight, it was really good. So easy to bake in the toaster oven. I had 6 pieces!

My first step upon opening a package of Joseph’s Lavash Bread is to cut the sheets up into bread-sized squares. From there, it can be put to a variety of uses. Last night, I made some pizza squares:

Post image

Each square is:

  • Bread-sized square of Joseph’s Lavash Bread (microwaved for 15-20 seconds for crispiness)
  • Slathered with a garlic butter (or a Jalapeno or Onions and Chives cream cheese works well)
  • Topped with spices of choice (smoked paprika, Italian seasoning, garlic powder, onion powder, …)
  • Diced onions
  • Four pizza pepperonis
  • A dab of Rao’s marina sauce on each pepperoni
  • Topped with a slice of cheese (I used a Colby Pepper Jack on the left and a Pepper Jack on the right)

Under the broiler until the cheese melts. These took me about 10 minutes to make, from start to finish.

I bought some of the salt and vinegar seasoning as well. I would like a little bit more vinegar zing

So I was at the job trailer the other day while I was fasting and saw one of my co-workers spreading brie on pieces of dark chocolate!
Swore I’d try it after the fast, it looked amazing… And it is!
I’m trying dairy free for a couple of weeks so this is goat’s milk brie. So I can only imagine a nice triple cream :drooling_face::drooling_face:

Oooolala Sounds fantastic! I was looking for something that would serve as a nice chip. Why not a chunk of chocolate

Lunch at my moms senior campus.

Brought home the gazpacho soup for my sweetie

Brie on chocolate sounds amazing!

I was curious where you found the Houlimi cheese? I saw a Keto sandwich recipe that used that cheese grilled as the actual “bread”, but I can’t find it anywhere

#1960

I haven’t tried it myself, but I’ve considered ordering some from The Wisconsin Cheese Mart:

(Diane) #1961

You might find a similar cheese at a Latin market.

Bacon and eggs.
I’m noticing a theme :joy:

#1963

Found mine at Costco.

(Jane) #1964

It IS hard to find and expensive. I found it in Houston at the grocery store HEB. (Texas chain).

My fourth one today!! All the coffee and all the cream!! :dancer::dancer:

This was my dinner last night - used up some leftover steak. Skillet steak remake! Cheese, onion, green pepper and sliced steak.

#1967

Yeah, there were more since we made a couple packs along with the liver, but they do love them and we usually make them just for them most times.

(Karen) #1968

Stirred in egg into some cooked purple cabbage. It was delicious, but it turned my eggs blue. :joy::rofl::joy:

@BeStill Queso Fresco, Queso Blanco and Indian Paneer have similar properties to Haloumi. The main difference is that Haloumi is brined after making it. They’re melt resistant and stable for frying or grilling. You can make paneer with lemon juice, whole milk and salt, it’s easy and fun. Cheeses made with rennet melt, cheese made with acid, not so much. :man_cook:t3:
