I know this looks like a chopped up omelette with sauce, but it was so much better than that!

I would generally just have my pasta sauce over cauliflower or broccoli when I’m making pasta for my husband, rather than making a substitute keto ‘pasta’.

This is 2 eggs, 50g cream cheese, salt, pepper, garlic granules and a pinch of xantham gum, baked for a few minutes in a moderate oven, chopped into strips and served with grated cheese and a sauce made from double cream, an egg, some leftover smoked ham that I was trying to use up, and some mushrooms.

Very, very rich. Texture was perfect. Oh boy I’m full now… My husband’s serving (of actual pasta, with the same sauce as me) was twice the size of mine but mine was so so filling that there’s no way I’d manage any more!

Pot roast (pressure cooked), with celery, radish & a bit of carrot, diced tomatoes with green chiles & beef broth (plus herbs & spices) for the liquid, which I then attempted to thicken up with cream & cream cheese for “gravy,” but I couldn’t wait any longer for it to thicken. It smelled too good!

Picked these beans a couple of hours ago. Ready to throw back in the skillet with the bacon grease from the 2 strips of bacon when it is closer to dinner time.

Trying some more pork ribs in my Instant Pot. Hubby going to finish on the grill instead of smoking them.

Ok y’all, don’t laugh. This is my first attempt at cooking meat in 5 years. I got a lot of marked down meat today, including some boneless pork ribs. I didn’t feel like getting the skillet dirty, and I don’t have a grill, so I cut one up into little pieces and nuked it. Put some garlic powder and salt and pepper on them. Not bad at all.

I know there’s somebody out there that says I desecrated the meat by nuking it but I don’t care. I’m lazy.

Super dinner with 2 of my ladies. Fresh ground chuck roast burger, home smoked blue cheese, pickled jalapeno peppers, homemade applewood bacon on butter lettuce.

Baked baby eggplant with freshly grated parmesan and fresh Italian basil.

No guilt when eating IF 18/6.

Sousvide New York Steak, Eggs and Butter

I’m doing a carnivore weekend feeling it out, I’m trying to bust what looks like a two month stall up2, down2 etc. I’m cutting HWC and vegetables for the weekend. Drinking my espresso black. I had some Slab Bacon this morning but not worth a pic. My son’s 25th is Monday and I am making him a Chocolate Cake with zucchini and whipped cream so just for the weekend now. I’ll see what happens then. Time to slip in an occasional 36 hour fast too, if I can get over not eating for a day. I have done it before but I had to for medical reasons feels crazy choosing it!

I’d experiment with putting some vinegar in a spray bottle, give a spritz, and toaster oven to dry it on.

Dang, may have to try that with some ranch seasons
