Ended my water-fast at 84hr mark, had a couple spoonfuls of pure coconut cream, felt great, no tummy upset. Waited about 20 min and had 1/2 avocado…instant stomach pain, maybe too much fiber after fasting? It wouldn’t be the fat or the coconut cream would have been an issue first :face_with_monocle:

We had pork belly yesterday.
I roasted chicken legs in the slow cooker overnight.
And I have been fermenting cucumbers.

Soooooo I had an idea this morning (when the chicken skin and liquor were still room temperature) to very finely chop the leftover pork, mix it with some salt and pepper and tiny pieces of tangy crisp cucumber, stir in the liquor, wrap it tightly in chicken skin and then tight cling film, and bung it in the fridge.

Ta daaaaaaaaa! Pork and chicken rolls!

I made two, and have sliced them in half to share one tonight and one tomorrow. Am confident that my husband won’t want his half, so I’m looking forward to ALL of it with my coronation chicken and stuffed eggs tonight.

Zoodles with Bacon, Eggs and a Gorgonzola Cream Sauce

This is quite delicious and easy to make.
Since I got my spiralizer I have been seeking out the best way to prepare them without the water bleed or a soggy result. I think I have solved it by air drying the Zoodles anywhere from 24-36 hours before using them. A 350g. batch reduced to 240g. overnight. They cook nicely to an al dente texture if you don’t fry them too long and they suck up some fat. :man_cook:t3:

I have another curry night on Saturday so I have been getting ahead. So for dinner I had small bowl of chicken korma


And then some beef madras - very hot - but Saturday’s lot are not such chilli wimps as the last lot😂

She’s in England, but you can look for it at Walmart, or a supermarket or Asian grocery store, or health food store. It might be found near tofu as it’s Japanese in origin. Shiritake, Miracle Noodles or other names. Ask for zero carb pasta.
