I had some leftover dill sour cream lemon mixture. I googled our website for sour cream and they said to stir egg into it. Pretty yummy. Very rich scrambled eggs

I know the salad ain’t super keto (not a single cruciferous veggie in the bowl!). It was a gift from my neighbour little Miss juice cleanse the vegan. And it was tasty
The vegetables in that salad look fine, KETO doesn’t have a cruciferous rule!
Someone made a trip to Costco!

It might depend on the store. But I am usually quite happy with PR from TR, and they’re not quite as pricey as LS, so who am I to quibble?
What brand? I must investigate! It looks like it’s made with viral wheat gluten, and I hesitate to pull the trigger on that just yet.

My only pic today is just a snack. A burger house here is serving “Reuben Burgers” til St. Paddy’s and I went with friends. SCRUMPTIOUS. This evening, I had some soup & a small serving from a big batch of asparagus I needed to cook, with Kerrygold on top as a treat. On the fine China, of course!
My two meals today. First one self explanatory. 2nd was “enchilada” meatballs.
There may be a cheesecake (low carb!) setting in the fridge that I made this afternoon with my 10yo. I just charged up a new lot of whipped cream in my dispenser so am ready to roll…
Had some cream that needed using by yesterday, plus a pack of supermarket ‘fish pie mix’ of fish and some frozen cauliflower in my freezer stash… three perfect excuses to make fish pie for last night’s supper! Made two batches, so we get to have this again later in the week!
I bought it at Aldi in Bradenton, Forida $3.99 , It’s catching on so they have been selling out with a two bag limit.
Clafoutis is like a custard, it’s delicious with a few wild blueberries tossed in. I just cooked it on my new keto cooking channel. Here is the super easy recipe.
Wild Blueberry Clafoutis
One serving is 1/8th slice of clafoutis - 3.75 net carbs
Ingredients:
1 1/2 cups wild blueberries
3/4 cup thick coconut cream
1/2 cup unsweetened vanilla almond milk
3 eggs
1/3 cup sifted almond flour
1/4 cup powdered erythritol
2 tsp vanilla
1/8 tsp salt
Directions:
Preheat the oven to 350 degrees.
Arrange blueberries in the bottom of a greased 9" pie plate.
In a medium size bowl:
Add coconut cream, almond milk, eggs, almond flour, erythritol, vanilla and salt.
Beat with a hand mixer until well blended.
Pour the custard over the blueberries.
Bake the clafoutis for 40-50 minutes or until it doesn’t jiggle.
Cool for 15 minutes before cutting.
Serve with whipped cream and fresh berries as garnish.
Monday OMAD:
2 x 8oz [GF/F 85/15] ground beef patties, 6oz chicken liver (raw), 1 slice beef liver (cooked), 4 sunny-side-up eggs.
Lazily fried some corned beef with a pinch of a variety of spices and some cheese!
Made some egg mayo chaffwiches for the next 2 days at work!
Another dish using Joseph’s Lavash Bread:
Lavash Bread Chicken Salad appetizer bites
This one has layers of:
• The bottom layer of each bite is a quarter of a bread-sized square of the Lavash bread
• A quarter slice of Colby pepper jack cheese
• Chicken salad
• Some spices – smoked paprika and Italian seasoning
• Diced onions
• Slices of Roma tomatoes, which are the perfect size
First time I made these, I made 4 of them. I was showing them off to someone who took one and said it was delicious. Later on, they said that the next time I make them, I need to make more of them.
