Roasted radish! Never heard of that before. Just the normal ones you usually have in salad? Maybe it could replace roast onions, which I miss.

@Paulene When you roast or fry radishes the resemble potatoes a bit, standard KETO substitute like cauliflower mash.

.No picture of dinner tonight. Just a chicken breast with a bit of blue cheese. Cooked the chicken and walnut oil, the breast was tender and juicy

Actually if ever there is a thread asking what do you miss most, I always say tropical fruit, mangos in particular! Occasionally, some of my Filipini colleagues would bring me one from the Philippines. They really were the best!
I wouldn’t trust myself with a whole one :roll_eyes:

There is actually a limit to how many mangoes I can eat, no matter how many are ripe.

Actually what got me in my original mess was a liking for fresh mango and orange juice with vodka! I shudder to remember quite how much!

you need logs of collagen … chicken feet are a GREAT source (and can be eaten because the bones get so soft).

for it to be jiggly, you also have to eat it cold (think meat flavored jello). If you heat it, it will turn to liquid.

I popped a couple of pork belly slices in the slow cooker after breakfast - I’m so glad I didn’t have to even think about cooking tonight as I’ve come down with a UTI today and am feeling rather ropey…

First thing in the morning I had a bulletproof coffee with grass fed butter and MCT oil.

For breakfast, I had two scrambled eggs and two link sausages

Right after my first meal I take my vitamin stack for the day.

For dinner, I’m having four 2oz boneless center cut pork chops and one whole avocado

One hour before bedtime I will drink brags apple cider vinegar with the mothers.

Easy and simple keto meals that hit the spot.

No pics today. Went out for supper with Mum and a friend. I had pate and salad, and burger, cheese bacon and salad … yawn!
My alarm is set for 4.15 am as I am off to Vienna with my friend Jen tomorrow :blush:. Just 3 nights but lots of plans!

Back to the grind today! It’s been a nice few days away in Bournemouth…my favourite part of the country.
I’ve had lots of yummy food and sausages and restaurant burgers so no doubt some carb creep there, but really did enjoy me few days away. I made sure to exercise every morning to eliminate any damage :joy::joy: back to normality today with salmon and broccoli with loads of butter

The last two nights I had this homemade meatloaf that had some diced jalapeños and portobello mushrooms in it and was topped with sugar-free ketchup and hot sauce. I was pretty good although a little dense without the usual breadcrumbs that I used to use but better the second night when I sliced it in thick slices and fried it in some bacon fat.

Wednesday OMAD:

1lb chuck roast (grass-fed/finished from local butcher).

This was cooked like the brisket the other night. I seared all sides, then cooked in the pressure cooker for 90 minutes. I then put it under the broiler @500 dergees for a few minutes each side.

This is the recipe I use:

I cut mine into fourths and roast until lightly browned - they are yummy. I will be sowing radish seeds soon and they fruit so quickly we will be having these before we know it!
