Pork belly slices, salt, pepper, that’s it. No liquid at all. 7 hours on ‘low’ - but they’re still fine after 9 hours if you need to leave them that long!
Caramelised and delicious. I do this quite often. I use the same method for chicken thighs and drumsticks - salt, pepper, chicken bits in a single layer, no water. Roast chicken pieces that are out of this world!
I am doing 18/6 IF. so I had a shrimp cocktail at around noon. i never knew how easy it is to make your own mayonnaise! I added sugarfree ketchup to this. And around 5pm I had a veal chop with left over cauliflower mac and cheese. Then, because I have the flu, I decided to treat myself to something sweet- which was a bit of whipping cream made with sugar free cocoa. I couldn’t eat it though - just a few bites. Thats it. And I think I have had only about 15 carbs besides still being under my calorie count for today.

It was my carbaholic friend’s honest! It was just there for the photoshoot! Actually I tried the teeniest bit of the chocolate and it was frighteningly sweet !

First thing in the morning I had a bulletproof coffee with grass fed butter and MCT oil.
For breakfast, I had two scrambled eggs and three strips of bacon.
Right after my first meal I take my vitamin stack for the day.
For dinner, I’m having chop meat 80/20 with broccoli and one whole avocado
One hour before bedtime I will have Braggs apple cider vinegar with the mothers.
Easy and simple keto meals that hit the spot.

Living in Europe I have to warn you.
Usually a mozzarella and rocket salad is made with balsamic vingar- Lots of carbs in that. Are you sure it was only pesto? I have never heard of that but it sounds yummy.
Then the goulash-often times they put something in the sauce to make it thick. Watch out for that too. Could be flour.
And the whipped cream on your coffee? That usually contains sugar.
Dont want to rain on your parade and maybe you dont care for this holiday- but I just wanted to make you aware.

Thank you @Chantarella, I will do my best to navigate through it all, I know I will take the odd risk. The dressing was good, pesto with white wine vinegar, I was assured. And yes thickening in the goulash I am sure. The coffee took me by surprise! Usually I get a jug of double cream, but I will go careful with the whipped!
Overall I want to enjoy it all without too much fretting! But I don’t want to do much damage, or feel unwell so thank you so much for your advice.

Was invited to a friend’s for lunch. She made duck. It was good! The other half is tofu. She’s a new friend and doesn’t know how I eat yet… but everything was keto friendly!
This is from the wet market on the way over. Warning It’s not attractive. Do you know what the yellow blobs are? They are a keto staple, but it still took me a second to recognize them in a new (for me) context.
