What Did You Keto Today? The Trilogy!
It’s one of my own creations - here you go:
300ml double cream whipped until fairly thick with 4tbsp Splenda using an electric whisk.
Add 2 x 250g tubs cream cheese and whisk until incorporated and thick.
Add zest and juice of a lemon and a lime, and whisk again.
If it’s the right consistency for you at that stage, job done.
If you want it a little looser (kinda depends on the size of the lemon and lime and how much juice there is), add an individual tub of natural yoghurt (125g) and whisk again.
Divide into 6 ramekins and refrigerate.
Really quick and easy.
It’s how I used to make no-bake lemon cheesecake before going keto. The non-keto version had a biscuit base (cookies and butter). TBH I never enjoyed cheesecake crust - always tasted like soggy stale biscuits to me!
@Jamboribs I stayed in Port Charlotte for two months last Christmas. Enjoy yourself, that’s a lovely pool.
I still do this only when I want to make a sauce. Sometimes this (the sauce) works, and sometimes this fails.
We had our work Xmas buffet today which consisted mostly of carbs, so I snacked on a few slices of salami and a load of cheese.
Needless to say I wasn’t hungry for dinner but I wanted some protein so I had a salad with mayo and chicken thighs. Hopefully I’ll fast until tomorrow now!!
I didn’t have time to make chaffles, but took roasted red pepper and tomato soup to work. Must of been too carby as I was starving this afternoon which is pretty rare for me.
Came home to play with my Christmas present to me. A new halogen oven. My old one broke a couple of years ago and I thought LCHF didn’t need it. But OMG I had forgotten about the perfect chicken wings
I just love melting a knob of butter in Franks hot sauce
Mrs Snaps has had a tough day and is retreating to bed after two glasses of Pinot Noir and a thorough unstinting testing of both the Christmas brandy and Stilton.
Early indications show that both latter items - or indeed what is left of them - will be enjoyed by those joining us for the festive shenanigans.

ahhh yes… the bad day blues…nothing serves a good “whine” then with some aged cheese to relieve the day.

Jody, are the Folios cheese wraps good? I have seen them in the stores and was wondering if they are more pliable than a big piece of thin cheese. I have only seen them in Publix.
