I typically smoke it first at 225 for about 4 hours. Then straight into a 155 hot tub time machine for 24 hours. Chill it overnight. Final smoke is just warming it for serving. So smoke around 180 - 200 degrees for a minimum of 3 hours.

@Jamboribs inspired me to try the ‘Wonder Bread’ Chaffle…to help me stay cheese free (weekdays only!) I thought I’d give them a go…I was sceptical at first but I have to say I give them a thumbs up!!
1 large egg beaten
1 tbsp almond flour
1 tbsp mayonnaise
1/8 tsp baking powder
1 tsp water
Whizz it all up and throw it in the waffle maker!
Wow thanks, that sounds simple! Have you tried it with avocado oil mayonnaise? How many does it make?
I whipped up some olive oil mayo quickly before I made the chaffles. Doesn’t make as many as the regular cheese version does…I got two chaffles made out of the mix and I usually get four with the cheese ones
Was out and about on the road and made a quick stop into Giant on the way back to the office… A few slices of Roast Beef and some slices of Baked Citrus/Garlic Turkey Breast. (little over a 1/2 lb. of each and only ate about half of those for lunch) Also ate 14 Olives & 5 small Pickles and a can of Vienna’s.
After a busy day I thought I would settle down to watch Masterchef with a culinary masterpiece of my own

Dinner before putting up more Christmas lights… Brussel Sprouts in Butter, Salmon, Pepperoni, Egg Salad, Cheese Hamburger and some Pimento Cheese.
Cauliflower and celery root mash next to my version of Salisbury steak (chop steak and glucomannan gravy). I really wanted to eat something that tasted like comfort. The box has been checked.
