I just finished a sous vide prime brisket point 155* for 30 hours and finished it on a mini green egg with Jack Daniels smoke.

I bought a sous vide stick for husband’s and my Christmas and here’s my first attempt. It could be a little tenderer, and I have a raging cold so I can’t really taste anything properly, though husband assured me it’s delicious. It’s so juicy! And I was impressed by how easy the apparatus was to set up and use. Sous vide all the things!

As do I! Japanese heavy duty ceramic grill/smoker. Expensive but worth it for a lifetime of use. Superior heat retention.

Thick sliced pork belly lettuce wrap for the win. I realize that a large percentage of my meal pics are of pork belly. I’m unapologetic. Right now I’m working on the development of a ketogenic pork belly Japanese chasu. Once it’s totally perfected, I’ll gladly share!
